2 cups of sushi rice
2 1/2 cups of water
1/4 cup of rice vinegar
1 pound of salmon fillet, skinless
1/4 cup of soy sauce
1/4 cup of mayonnaise
1 tablespoon of chili paste
1 diced avocado
1/4 cup of sliced green onions
4 sheets of seaweed, cut
Instructions
Start by rinsing the sushi rice under cold water until the water runs clear. In a rice cooker or a pot, combine the washed rice and water. Cook according to your rice cooker's instructions, or bring to a boil, then reduce the heat and cover for 18-20 minutes until the water is absorbed.
While the rice is cooking, combine rice vinegar, sugar, and salt in a small saucepan. Heat until the sugar dissolves, then set aside to cool. Once the rice is ready, fold this mixture into the rice gently using a wooden spatula to avoid breaking the grains. Let it cool completely.
Coat the salmon fillet with soy sauce and let it marinate for about 10 minutes. Preheat your oven to 375°F (190°C). Place the salmon on a baking sheet lined with parchment paper and bake for about 20 minutes, or until fully cooked and flakey.
Once the salmon is ready, flake it with a fork into bite-sized pieces. In a large bowl, combine the flaked salmon, mayonnaise, chili paste, diced avocado, and part of the green onions. Mix thoroughly.
Spread the cooked sushi rice at the bottom of a greased 9×13 inch baking dish, pressing it down slightly. Evenly distribute the salmon mixture over the rice. Crumble the seaweed sheets on top and sprinkle with the remaining green onions.
Cover the dish with foil and bake for an initial 15 minutes. Remove the foil and bake for an additional 10 minutes.
Let it cool for a few minutes, then serve straight from the baking dish with extra soy sauce, pickled ginger, or wasabi on the side.
