1 cup instant polenta
4 cups chicken or vegetable broth

2 cloves garlic, minced

1 cup fresh spinach (or 1/2 cup frozen)
2 tablespoons olive oil

Prepare the Polenta: In a large saucepan, bring 4 cups of chicken or vegetable broth to a boil. Gradually whisk in the instant polenta, stirring until the mixture thickens (about 5 minutes). Remove from heat and stir in salt, pepper, and half the mozzarella cheese. Set aside.
Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 4 minutes. Next, add the garlic and sausage; cook until browned and cooked through (approximately 8-10 minutes). Incorporate the diced tomatoes and spinach, cooking until the spinach is wilted.
