1 (9-inch) pie crust
6 large eggs
1 cup of milk
4 oz of cream cheese
2 cups of fresh chopped spinach
1/4 cup of chopped fresh herbs (basil, thyme, chives)
1 small diced onion
1 teaspoon of salt
1/2 teaspoon of pepper
1 cup of shredded or crumbled cheese (cheddar or feta)
Instructions
Preheat your oven to 375°F (190°C). If using a frozen pie crust, allow it to thaw according to package instructions. If you're making it from scratch, roll it out and place it in a 9-inch pie dish, crimping the edges.
In a skillet over medium heat, melt a tablespoon of butter or olive oil. Add the diced onion and cook until translucent, about 3-4 minutes. Then add the chopped spinach and cook until wilted. Remove from heat and let it cool.
In a large mixing bowl, whisk together the eggs, milk, cream cheese (softened), salt, and pepper until well blended. Stir in the fresh herbs, making sure they're evenly distributed.
Fold the sautéed spinach and onion mixture into the egg base. Add the shredded cheese and mix gently until combined.
Pour the egg mixture into the prepared crust and spread it out evenly.
Bake the quiche in the preheated oven for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
