  • 6 large eggs

  • 4 oz of cream cheese
  • 2 cups of fresh chopped spinach
  • 1/4 cup of chopped fresh herbs (basil, thyme, chives)
  • 1 small diced onion
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 cup of shredded or crumbled cheese (cheddar or feta)

  • Instructions

  • Preheat your oven to 375°F (190°C). If using a frozen pie crust, allow it to thaw according to package instructions. If you're making it from scratch, roll it out and place it in a 9-inch pie dish, crimping the edges.
  • In a skillet over medium heat, melt a tablespoon of butter or olive oil. Add the diced onion and cook until translucent, about 3-4 minutes. Then add the chopped spinach and cook until wilted. Remove from heat and let it cool.
