  • Salt and pepper, to taste
  • Chopped fresh parsley or cilantro, for garnish
  • 4 slices of crusty bread (sourdough or whole grain work great)

  • Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onions and cook until translucent, about 5 minutes.
  • Toss in the diced red bell pepper and minced garlic, stirring frequently for about 3-4 minutes, until softened.
  • Pour in the diced tomatoes, followed by cumin, smoked paprika, salt, and pepper. Let it simmer for 10 minutes.
  • Make small wells in the sauce and crack the eggs into each well. Cover and cook for 5-7 minutes until the eggs are set.
  • Toast the bread until golden brown.
