1 lb of boneless and skinless chicken thighs
2 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of paprika
1 packet (1 oz) of ranch seasoning mix
1 cup of sliced bell peppers (red and yellow)
1 cup of sliced zucchini
4 pieces of pita bread
½ cup of Greek yogurt
2 tablespoons of chopped fresh herbs (dill, parsley)
1 tablespoon of lemon juice
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: In a large mixing bowl, combine the olive oil, garlic powder, paprika, ranch seasoning mix, and a pinch of salt and pepper. Add the chicken thighs and coat well.
Step 3: While the chicken marinates, slice the bell peppers and zucchini into thin strips.
Step 4: Spread the marinated chicken thighs on one side of a large sheet pan and arrange the sliced vegetables on the other side.
Step 5: Place the sheet pan in the oven and roast for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
Step 6: In a small bowl, mix Greek yogurt, freshly chopped herbs, lemon juice, salt, and pepper until combined.
Step 7: Once cooked, slice the chicken into strips and lay them inside each pita pocket along with roasted vegetables. Drizzle the herby ranch over the top.
