  • 1 lb of boneless and skinless chicken thighs
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1 packet (1 oz) of ranch seasoning mix
  • 1 cup of sliced bell peppers (red and yellow)
  • 1 cup of sliced zucchini
  • 4 pieces of pita bread
  • ½ cup of Greek yogurt
  • 2 tablespoons of chopped fresh herbs (dill, parsley)
  • 1 tablespoon of lemon juice

  • Instructions

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: In a large mixing bowl, combine the olive oil, garlic powder, paprika, ranch seasoning mix, and a pinch of salt and pepper. Add the chicken thighs and coat well.
  • Step 3: While the chicken marinates, slice the bell peppers and zucchini into thin strips.
  • Step 4: Spread the marinated chicken thighs on one side of a large sheet pan and arrange the sliced vegetables on the other side.
  • Step 5: Place the sheet pan in the oven and roast for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

  • Step 7: Once cooked, slice the chicken into strips and lay them inside each pita pocket along with roasted vegetables. Drizzle the herby ranch over the top.
