Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or fettuccine pasta (or substitute with whole-grain pasta)
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (or chicken broth for a non-alcoholic version)
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Garlic bread, for serving (store-bought or homemade)

  • Instructions

  • In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
  • In a large skillet, heat the olive oil and butter over medium heat. Add minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant. Toss in the shrimp and cook for about 2-3 minutes until they turn pink and opaque.
  • Pour in the white wine (or chicken broth), scraping the bottom of the pan to release any flavorful bits. Allow the mixture to simmer for about 3 minutes, then stir in the lemon juice, salt, and pepper.
  • Add the cooked pasta and reserved pasta water to the skillet. Gently toss everything together until well combined. Stir in the fresh parsley for a burst of color and flavor.
  • Plating the dish creatively makes all the difference. Serve the shrimp scampi in bowls and slice the garlic bread, either store-bought or homemade, into pieces to accompany the meal.
