  • 1 cup pomegranate seeds
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped fresh parsley

  • Instructions

  • Bring a pot of salted water to a boil. Blanch the trimmed asparagus for 2-3 minutes until bright green and tender-crisp. Transfer to a bowl of ice water to halt cooking.
  • Chop fresh parsley and crumble feta cheese.
  • In a large mixing bowl, combine the blanched asparagus, pomegranate seeds, parsley, and crumbled feta. Toss gently to mix.
  • Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl. Drizzle over the salad and toss gently.
