3–4 lbs of pork shoulder
2 cups of apple cider
2 medium of onions, sliced
4 cloves of garlic, minced
1/4 cup of brown sugar
1/4 cup of cider vinegar
2 teaspoons of fresh thyme
Salt and pepper to taste
Begin by trimming excess fat from your pork shoulder. Season generously with salt and pepper.
In a large skillet, heat a tablespoon of oil over medium-high heat. Sear the pork until browned on all sides, about 3-4 minutes per side.
Place sliced onions, minced garlic, and thyme at the bottom of the slow cooker.
Pour apple cider and cider vinegar over the pork. Add brown sugar, ensuring it dissolves, then place the seared pork shoulder on top.
Cover and set the slow cooker to low for 8 hours.
