1 lb (450 g) of Ground Beef
1 large Onion (chopped)
4 cloves of Garlic (minced)
1 medium Bell Pepper (chopped)
1 large Carrot (chopped)
1 can (15 oz) of Canned Tomatoes (diced)
1 can (15 oz) of Red Kidney Beans (drained and rinsed)
1 can (15 oz) of Pinto Beans (drained and rinsed)
2 tbsp of Chili Powder
1 tsp of Cumin
1 tsp of Salt
1/2 tsp of Pepper
1 cup of Beef Broth
2 tbsp of Olive Oil
Start by heating olive oil in a skillet over medium-high heat. Once hot, add the ground beef and cook until browned, approximately 5-6 minutes.
In the same skillet, add chopped onions, garlic, bell pepper, and carrot. Sauté for about 3-4 minutes until softened.
Transfer the browned beef and sautéed vegetables to the slow cooker.
Pour in the diced tomatoes, red kidney beans, and pinto beans. Mix thoroughly to combine all the ingredients.
Sprinkle in the chili powder, cumin, salt, and pepper. Taste and modify the seasoning.
Pour in the beef broth and give everything a good stir.
Cover and set your slow cooker to low for 6-8 hours or high for 4 hours.
Before serving, give your chili a good stir and add your favorite toppings.
