3–4 lbs of corned beef brisket
4 cups of water or beef broth
1 small head of cabbage, cut into wedges
4 carrots, peeled and cut into chunks
4 potatoes, cut into quarters
1 packet of spices (included with corned beef)
1 teaspoon of black peppercorns
Instructions
Rinse the corned beef brisket under cold water to remove excess brine. Place the brisket into the slow cooker, fat side up, and scatter the spice packet on top.
Pour the 4 cups of water or beef broth into the slow cooker.
Layer the cut vegetables—potatoes, carrots, and cabbage—around the brisket.
Cover the slow cooker and set it to low heat for 8-10 hours.
Once the cooking time is up, remove the corned beef, let it rest for a few minutes before slicing, and serve with the vegetables.
