2 pounds of boneless, skinless chicken thighs
1 cup of chicken broth
1 large diced onion
4 cloves of minced garlic
2 sliced bell peppers (any color)
2 tablespoons of olive oil
2 tablespoons of chili powder
1 can (15 oz) of drained black beans
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
Gather all your ingredients on a clean surface. Prepare the chicken by trimming any excess fat and seasoning it lightly with salt and pepper.
In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
