4 boneless, skinless chicken breasts
2 cups of long-grain rice (or brown rice for a healthier option)
4 cups of chicken broth (low sodium recommended)
1 large onion, finely diced
4 cloves of garlic, minced
1 cup of frozen peas (or any preferred vegetable)
2 tablespoons of olive oil
Juice and zest of 2 lemons
2 teaspoons of dried oregano
1 teaspoon of dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Start by gathering all the ingredients. Rinse the rice under cold water until the water runs clear.
For an added depth of flavor, lightly sear the chicken breasts in olive oil over medium heat for 3-4 minutes on each side until golden brown. This step is optional but highly recommended!
In your slow cooker, add the sautéed chicken or raw chicken breasts, rinsed rice, diced onion, garlic, lemon juice and zest, oregano, thyme, salt, and pepper. Pour the chicken broth over the top.
Cover the slow cooker and set it to low for 4-6 hours or high for 2-3 hours. The chicken should be thoroughly cooked (165°F internally), and the rice should be fluffy and tender.
In the last 30 minutes of cooking, stir in the frozen peas or any vegetables of your choice.
Once cooked, fluff the rice with a fork, serve hot, and garnish with freshly chopped parsley.
