1 pound ground beef (or turkey for a leaner option)
1 onion, diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
2 cups beef or chicken broth
1 packet taco seasoning
8 ounces cream cheese
2 cups shredded cheddar cheese
Optional toppings: sliced jalapeños, sour cream, cilantro, or avocado
Instructions
Brown the Meat: In a skillet over medium heat, brown the ground beef (or turkey) with the diced onion and minced garlic until fully cooked. Drain excess fat, if necessary.
Combine Ingredients: Transfer the meat mixture to your slow cooker. Add the black beans, corn, diced tomatoes, broth, and taco seasoning. Stir well to combine all ingredients.
Add Cream Cheese: Place the block of cream cheese on top of the mixture without stirring. This will allow it to melt beautifully as the soup cooks.
