  • 1/4 teaspoon of salt
  • 1/2 cup of sugar
  • 1 large egg
  • 1/4 cup of vegetable oil
  • 1/4 cup of all-purpose flour (for streusel)
  • 1/4 cup of brown sugar
  • 1/4 teaspoon of cinnamon (for streusel)
  • 2 tablespoons of cold butter, cubed

  • Instructions

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together sugar, egg, pumpkin puree, and vegetable oil until smooth.
  • Gradually add the wet mixture to the dry mixture, stirring until just combined.
