  • 2 1/4 teaspoons of active dry yeast

  • 1 cup of warm milk (110°F)
  • 2 large eggs
  • 1/4 cup of melted butter
  • 2 tablespoons of red food coloring
  • 1/2 cup of brown sugar (for filling)
  • 2 tablespoons of ground cinnamon
  • 8 ounces of softened cream cheese
  • 2 cups of powdered sugar
  • 1 teaspoon of vanilla extract

  • Instructions

  • Begin by warming 1 cup of milk until it's around 110°F. Combine the warm milk and yeast in a small bowl, stirring gently. Let it sit for about 5 minutes. Once it bubbles, it’s ready.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, and salt. Create a well in the center and add the yeast mixture, melted butter, eggs, and red food coloring. Mix until a dough forms.
  • Transfer the dough to a floured surface. Knead for about 8-10 minutes until it’s smooth and elastic. If the dough is too sticky, add small amounts of flour as needed. Form it into a ball and place it in a greased bowl. Cover it with a damp cloth and let it rise in a warm place for 30 minutes.
  • While the dough is rising, combine the brown sugar, cinnamon (or cardamom if using), and a pinch of salt in a bowl.
  • After the dough has risen, punch it down gently and roll it out into a 15×10-inch rectangle on a floured surface. Spread melted butter over the surface of the dough, followed by an even layer of the cinnamon-sugar mixture.
  • Starting from one long edge, tightly roll the dough toward you. Once rolled, pinch the seams to seal. Using a sharp knife or dental floss, slice the roll into 12 equal pieces. Place the slices cut-side up in a greased 9×13-inch baking dish.
  • Cover the dish with a towel and let the rolls rise for another 30 minutes while you preheat the oven to 350°F.
  • Bake the rolls in the preheated oven for 25-30 minutes, or until they are golden brown on top.
  • While your rolls are baking, prepare the cream cheese frosting. In a mixing bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the rolls are out of the oven and slightly cooled, generously spread the cream cheese frosting over the warm rolls.
