1 cup (240g) of sourdough starter
3 cups (360g) of all-purpose flour
1 cup (240ml) of warm water
1.5 teaspoons of salt
¼ cup (50g) of brown sugar
¼ cup (60g) of butter
2 medium apples (diced)
1 teaspoon of cinnamon
¼ cup (30g) of powdered sugar (for topping)
In a large mixing bowl, combine your sourdough starter and warm water, stirring to combine.
Add flour, salt, and brown sugar while mixing with a spoon or your hands to create a shaggy dough.
Knead the dough for about 8-10 minutes until smooth and elastic.
Transfer the dough to a lightly greased bowl, cover, and let it rise at room temperature for 1-2 hours or until it doubles in size.
Prepare the apple filling by mixing diced apples, cinnamon, and one tablespoon of brown sugar in a separate bowl.
Once the dough has doubled, gently deflate it and transfer it to a greased baking pan. Stretch the dough to fit the pan.
Distribute the apple mixture over the top of the dough and press the apple pieces into the surface.
Cover the pan loosely and let the focaccia rise for another hour. Preheat your oven to 400°F (200°C).
Bake the focaccia for 20-25 minutes or until golden brown and sounds hollow when tapped.
Let it cool in the pan for 5 minutes before transferring to a wire rack.
