  • Stir in the chopped celery and cooked ham or bacon. Sauté for an additional 5 minutes until well combined.
  • Drain the soaked black-eyed peas and add them to the pot along with the vegetable broth, bay leaves, salt, and pepper. Stir everything together.
  • Bring the mixture to a boil, then reduce the heat to low and cover the pot. Allow it to simmer for 60 minutes, stirring occasionally.
  • After the cooking time, remove the bay leaves and adjust seasonings as needed. Serve hot, garnished with fresh herbs.
