1 pound of boneless, skinless chicken breasts
1 cup of uncooked jasmine rice (or substitute with brown rice for a healthier option)
1 cup of diced celery
1 cup of green onions, chopped
1/2 cup of mayonnaise
1 tablespoon of Dijon mustard
1 tablespoon of apple cider vinegar
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
Salt and pepper to taste
1 cup of panko bread crumbs
2 tablespoons of olive oil (optional)
Fresh parsley for garnish
Instructions
Step 1: Cook the Chicken – Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, and smoked paprika. Bake for about 25-30 minutes until fully cooked.
Step 2: Prepare the Rice – Rinse jasmine rice under cold water, then combine with 2 cups of water in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15-20 minutes until the rice is fluffy.
Step 3: Mix the Dressing – In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
Step 4: Combine Ingredients – Once the chicken is cooked and the rice is ready, allow both to cool. Dice chicken and add to bowl with rice, diced celery, and green onions. Pour the dressing over the mixture and gently fold until well coated.
Step 5: Prepare the Crispy Rice Topping – In a skillet, heat olive oil over medium heat. Add panko bread crumbs and toast until golden brown, stirring frequently.
