1 pound boneless, skinless chicken breast, cut into bite-sized pieces
1 cup all-purpose flour
1 cup buttermilk (or a dairy-free alternative)
1 cup seasoned breadcrumbs
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cayenne pepper (adjust for desired spice level)
1/2 cup buffalo sauce (store-bought or homemade)
2 tablespoons honey (optional)
Salt and pepper to taste
Olive oil or cooking spray for baking
Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine diced chicken pieces with salt, pepper, garlic powder, and paprika.
Set up a breading station with bowls of flour, buttermilk, and seasoned breadcrumbs. Dip each piece of chicken first in flour, then buttermilk, and finally coat thoroughly with breadcrumbs.
