1 lb boneless, skinless chicken breasts, cooked and shredded
1 cup shredded mozzarella cheese
½ cup Buffalo sauce (adjust based on spice preference)
1 cup breadcrumbs (panko for extra crunch)
2 eggs, beaten
½ cup all-purpose flour
Cooking oil for frying
Optional: diced green onions for garnish
Instructions
In a large mixing bowl, combine the shredded chicken with ½ cup of Buffalo sauce. Stir thoroughly until the chicken is evenly coated.
Take a small handful of the chicken mixture and press it around a mozzarella stick, making sure to thoroughly cover it. Repeat until all mozzarella sticks are wrapped.
Set up a breading station with three bowls: one with flour, another with beaten eggs, and the last one with breadcrumbs. Roll each chicken-coated mozzarella stick in the flour, dip it in the egg, and coat it in breadcrumbs.
In a large skillet, heat about ½ inch of cooking oil over medium heat. Fry the breaded mozzarella sticks until golden brown, about 2-3 minutes per side.
Once fried, place the mozzarella sticks on a paper towel to drain excess oil. Serve hot with Buffalo sauce for dipping.
