  • 1 can (15 oz) black beans, drained and rinsed

  • 1 pack of taco seasoning
  • 3 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chopped fresh cilantro
  • 1 avocado, diced (optional)

  • Instructions

  • In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain the excess fat.
  • Add the taco seasoning, black beans, and diced tomatoes to the skillet. Stir well and let it simmer for about 5 minutes.
  • Spread half of the crushed tortilla chips on the bottom of a greased 9×13 baking dish. Spoon half of the meat mixture over the tortilla chips, spreading it evenly. Follow this with a layer of cheese.
  • Preheat your oven to 350°F (175°C). Bake the casserole for 25-30 minutes or until the cheese is bubbly and golden brown.
