8 large flour tortillas
2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1 cup crumbled feta cheese (substitute with goat cheese for a different flavor)
1 cup shredded mozzarella cheese (use cheddar for a sharper taste)
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
Sour cream or Greek yogurt for dipping (optional)
Instructions
In a medium bowl, combine the chopped spinach, crumbled feta, shredded mozzarella, garlic powder, salt, and pepper. Mix well until evenly combined.
Heat a non-stick skillet over medium heat and lightly brush with olive oil. Place one tortilla in the skillet, then spread about 1/4 cup of the spinach and feta mixture over half of the tortilla. Fold the other half over the filling to create a half-moon shape. Cook for 2-3 minutes until the bottom is golden brown.
Carefully flip the quesadilla using a spatula and cook for an additional 2-3 minutes until the second side is golden and the cheese has melted.
Remove the quesadilla from the skillet and let it rest for a minute. Cut it into wedges and serve with sour cream or Greek yogurt for dipping. Repeat with the remaining tortillas and filling.
