4 large eggs
1 cup shredded cheese (cheddar, mozzarella, or a dairy-free alternative)
1/2 teaspoon garlic powder (fresh minced garlic works too)
Salt and pepper to taste
1 tablespoon olive oil (coconut oil can be a flavorful alternative)
Optional: chopped onions or bell peppers for added flavor
Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a skillet, heat olive oil over medium heat. Add the chopped spinach and sauté for about 3-4 minutes until wilted.
