8 oz cooked rice noodles
2 cups finely shredded cabbage (green or purple)
1 large carrot, julienned
1 medium bell pepper, sliced thin
1/2 cup chopped fresh mint leaves
1/2 cup chopped fresh cilantro
3 green onions, sliced
1/3 cup chopped peanuts
1/4 cup peanut butter
2 tablespoons soy sauce
2 tablespoons lime juice
3 tablespoons water
1 tablespoon maple syrup
Instructions
Step 1: Prepare the Rice Noodles – Cook the rice noodles according to package instructions. Rinse under cold water to stop the cooking process and set aside to cool.
Step 2: Chop Vegetables and Herbs – Finely shred the cabbage, julienne the carrot, and slice the bell pepper. Chop the mint, cilantro, and green onions.
