Ingredients

  • 1 lb of steak (Sirloin or Ribeye), cut into bite-sized pieces
  • 2 medium sweet potatoes, diced
  • 1 cup of bell peppers (mixed colors), sliced
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of salt, or to taste
  • 1/2 teaspoon of pepper, or to taste

  • Instructions

  • Prepare your ingredients by cutting your steak into bite-sized pieces and dicing the sweet potatoes. Slice the bell peppers into strips.
  • In a large bowl, combine steak pieces with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until well-coated.
  • Preheat your oven to 425°F (220°C). Spread diced sweet potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast for about 20 minutes.
  • Heat a large pan over medium-high heat. Add the steak bites in a single layer and sear for about 3-4 minutes per side until desired doneness is reached. Remove from the pan and let rest.
  • In the same pan, add sliced bell peppers and sauté for about 5-7 minutes until tender but slightly crunchy.
  • Once sweet potatoes are roasted and steak bites are cooked, add them to the pan with sautéed bell peppers and gently toss for an additional minute.
  • Plate and serve the dish immediately, garnished with fresh herbs if desired.
