1 clove garlic, minced

2 tablespoons red wine vinegar
1/4 cup olive oil
2 large sweet potatoes, peeled and diced
1/4 cup unsweetened almond milk (or regular milk)
2 tablespoons butter (or coconut oil for a dairy-free option)

Instructions
Step 1: Prepare the Sweet Potatoes – Start by placing the diced sweet potatoes in a pot of salted water. Bring it to a boil and let it cook for about 15 minutes, or until tender.
