Ingredients

Scale
  • 2 ribeye steaks (1-inch thick, about 12 oz each)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh cilantro leaves
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 2 large sweet potatoes, peeled and diced
  • 1/4 cup unsweetened almond milk (or regular milk)
  • 2 tablespoons butter (or coconut oil for a dairy-free option)
  • Salt and pepper to taste

  • Instructions

  • Step 1: Prepare the Sweet Potatoes – Start by placing the diced sweet potatoes in a pot of salted water. Bring it to a boil and let it cook for about 15 minutes, or until tender.
  • Step 2: Cook the Steak – While the potatoes are cooking, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the steaks with salt and pepper, and add them to the pan. Sear for about 4–5 minutes on each side for medium-rare.
  • Step 3: Make the Green Sauce – In a food processor, combine parsley, cilantro, garlic, Dijon mustard, red wine vinegar, olive oil, salt, and pepper. Blend until smooth.
  • Step 4: Mash the Sweet Potatoes – Once the sweet potatoes are tender, drain them and return them to the pot. Add almond milk, butter, salt, and pepper, then mash until creamy and smooth.
  • Step 5: Plate and Serve – Slice the rested steak, place it on a plate, and drizzle generously with green sauce. Serve alongside a generous scoop of mashed sweet potatoes.
