4 pieces (about 1.5 lbs) of boneless, skinless chicken breasts
2 cups of sliced fresh strawberries
1/2 cup of chopped fresh basil leaves
3 tablespoons of olive oil
3 cloves of minced garlic
2 tablespoons of balsamic vinegar
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions
Start by patting the chicken breasts dry with paper towels to ensure a perfect sear without excess moisture.
In a mixing bowl, whisk together 2 tablespoons of olive oil, minced garlic, balsamic vinegar, salt, and pepper. Add in roughly chopped basil and half of the sliced strawberries. Allow this mixture to mingle for at least 10 minutes.
Coat the chicken breasts generously with the marinade, ensuring each piece is well covered. Let them marinate for about 15 minutes.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Add the remaining strawberries to the skillet during the last couple of minutes of cooking.
Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing. Plate beautifully, garnish with more fresh basil, and drizzle the pan juices over the top.
