1 cup of all-purpose flour
1/2 cup of unsalted butter (1 stick)
1 cup of water
4 large eggs
2 tablespoons of granulated sugar
2 cups of strawberries (sliced)
1 cup of heavy cream
1/4 cup of powdered sugar
Instructions
Preheat your oven to 400°F (200°C). In a medium saucepan, combine water, butter, and sugar. Bring to a gentle boil over medium heat, stirring until the butter melts completely.
Once boiling, add in the flour all at once and stir vigorously until a dough forms and pulls away from the sides of the pan.
Allow the dough to cool for about 5 minutes before adding the eggs, one at a time, whisking vigorously after each addition until smooth and glossy.
Transfer the choux pastry to a piping bag fitted with a large round tip. On a baking sheet lined with parchment paper, pipe 1.5-inch circles, leaving about 2 inches between each puff.
Bake for 25-30 minutes, or until golden brown and puffed. Let them cool on a wire rack for about 10 minutes.
While the puffs cool, whip the heavy cream with powdered sugar until soft peaks form. Fold in sliced strawberries.
Make a small slit in the side of each puff and fill generously with the whipped cream mixture.
Dust with additional powdered sugar before serving.
