Instructions
Start by preheating your oven to 350°F (175°C). Mix together the crushed graham crackers, shredded coconut, and melted butter until combined. Spread the mixture onto a baking sheet lined with parchment paper and bake for 8–10 minutes or until golden brown.
In a large bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the powdered sugar and vanilla extract, mixing until well incorporated. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully blended.
Combine the diced strawberries with lemon juice in another bowl. Set aside.
