Ingredients

  • 2 cups of rolled oats
  • 1 cup of all-purpose flour
  • 3/4 cup of brown sugar
  • 1/2 cup of unsalted butter (melted)
  • 2 cups of fresh strawberries (chopped)
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Mix chopped fresh strawberries with a tablespoon of brown sugar and a dash of cinnamon.
  • Combine rolled oats, flour, brown sugar, melted butter, baking powder, salt, and remaining cinnamon in a bowl until crumbly. Reserve 1 cup for topping.
  • Line an 8×8 inch baking dish with parchment paper. Press oat mixture into the bottom. Pour the strawberry filling over the crust and sprinkle with reserved oat mixture.
  • Bake for about 30 minutes until topping is lightly golden and strawberries are bubbling.
  • Cool completely in the pan for at least 45 minutes. Lift out using parchment and cut into squares.
