2 cups of rolled oats
1 cup of all-purpose flour
3/4 cup of brown sugar
1/2 cup of unsalted butter (melted)
2 cups of fresh strawberries (chopped)
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
1 teaspoon of baking powder
1/4 teaspoon of salt
Instructions
Preheat the oven to 350°F (175°C).
Mix chopped fresh strawberries with a tablespoon of brown sugar and a dash of cinnamon.
Combine rolled oats, flour, brown sugar, melted butter, baking powder, salt, and remaining cinnamon in a bowl until crumbly. Reserve 1 cup for topping.
Line an 8×8 inch baking dish with parchment paper. Press oat mixture into the bottom. Pour the strawberry filling over the crust and sprinkle with reserved oat mixture.
Bake for about 30 minutes until topping is lightly golden and strawberries are bubbling.
Cool completely in the pan for at least 45 minutes. Lift out using parchment and cut into squares.
