2 lbs of ground beef
1 cup of breadcrumbs
1 medium onion, diced
2 cloves of garlic, minced
1 large egg
2 tbsp of Worcestershire sauce
1 cup of cheddar cheese, shredded
1 green bell pepper, diced
4 cups of mashed potatoes (prepared)
½ cup of milk
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, diced onion, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix the ingredients with your hands.
In a separate bowl, mix together the shredded cheddar cheese and diced green bell pepper.
Spread the meat mixture into a rectangle about 1-inch thick. Place the cheese and pepper mixture in the center and carefully roll the meat around it, sealing the ends to create a log shape.
Transfer the stuffed meatloaf to a greased baking dish or a loaf pan. Bake it in the preheated oven for about 60 minutes or until a meat thermometer reads 160°F (70°C).
