1 boneless pork loin roast (approximately 3–4 pounds)
2 cups of bread crumbs
1 cup of diced vegetables (onions, bell peppers, celery)
4 cloves of garlic, minced
1 cup of chicken or vegetable broth
1 tablespoon of dried herbs (thyme, rosemary, or sage)
Salt and pepper to taste
Olive oil for searing
Preheat the oven to 375°F (190°C). Butterfly the pork loin roast to create a pocket for stuffing.
Combine the bread crumbs, diced vegetables, minced garlic, dried herbs, salt and pepper in a bowl. Gradually add broth until the mixture is moist.
Stuff the pocket of the pork roast with the stuffing, then secure it with kitchen twine or toothpicks.
Heat olive oil in an oven-safe skillet and brown the pork on all sides.
Transfer the skillet to the oven and bake for approximately 1 to 1.5 hours until the internal temperature reaches 145°F (63°C).
