4 large organic oranges
2 cups of granulated sugar
2 cups of water
1/4 teaspoon of salt
8 oz of dark chocolate (optional)
Instructions
Wash the oranges thoroughly and slice off the top and bottom of each orange. Cut the oranges into quarter-inch thick strips, removing any bitter white pith.
In a medium saucepan, combine the orange peel strips, 2 cups of water, and 1/4 teaspoon of salt. Bring to a rolling boil and let boil for 10-15 minutes. Drain and rinse with cold water.
In the same saucepan, combine 2 cups of granulated sugar and 2 cups of water over medium heat, stirring until the sugar dissolves completely. Let it simmer gently.
Add the boiled orange peels into the sugar syrup ensuring they are fully submerged. Simmer on low heat for about 45 minutes until they become translucent.
Remove the peels from the syrup using a slotted spoon and place them on a wire rack over parchment paper to dry for several hours. Optionally, dip them in melted dark chocolate.
