4 bone-in, skin-on chicken thighs
2 large oranges (juice and zest)
1/4 cup honey
2 tablespoons soy sauce (low sodium recommended)
4 cloves garlic (minced)
1 tablespoon fresh ginger (grated)
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
In a mixing bowl, combine the orange juice, zest, honey, soy sauce, garlic, ginger, cumin, and paprika. Whisk until well blended. Place chicken thighs in a large zip-top bag, pour the marinade over, seal, and refrigerate for at least 30 minutes.
Preheat your oven to 400°F (200°C).
Line a baking dish with aluminum foil or parchment paper. Remove chicken from marinade and place in the prepared dish, skin-side up. Pour leftover marinade over chicken.
Roast the chicken in the preheated oven for 35-45 minutes until an instant-read thermometer reads 165°F (75°C).
Remove the chicken from the oven and let it rest for 5-10 minutes. Sprinkle with freshly chopped parsley before serving.
