  • 2 cups Sugar

  • ¼ teaspoon Salt
  • 1 cup Dark chocolate (optional, for coating)
  • ½ cup Coconut flakes (optional)

  • Instructions

  • Start by thoroughly washing the oranges to remove any pesticides or wax. Using a zester or sharp knife, carefully peel the oranges, ensuring that you leave as much of the white pith behind as possible. Slice the peels into thin strips for a better texture in your candy.
  • In a medium saucepan, bring about 2 cups of water to a boil. Once boiling, add the orange peel strips and boil for about 10 minutes. This process blanches the peels, removing any bitterness and softening them. After 10 minutes, drain and rinse the peels under cold water to halt the cooking process.
  • In the same saucepan, combine 2 cups of sugar, 2 cups of water, and ¼ teaspoon of salt. Bring this mixture to a gentle boil over medium heat, stirring continuously. Once the sugar is completely dissolved, add the blanched orange peels to the syrup.
  • Reduce the heat to low and allow the orange peels to simmer in the syrup for about 45 minutes, until the peels become translucent and tender. Stir occasionally to ensure nothing sticks to the bottom of the pan.
  • After simmering, use a slotted spoon to remove the peels from the syrup, placing them on a wire rack. Let them cool and dry for at least an hour. If desired, you can roll the damp peels in sugar for added sweetness and texture.
  • If you'd like to add a chocolate coating, melt 1 cup of dark chocolate in a microwave-safe bowl or double boiler. Dip each dried orange peel into the melted chocolate, ensuring an even coating. Place the chocolate-dipped peels on a separate wire rack to cool and set. For a fun twist, sprinkle shredded coconut on top while the chocolate is still melted.
