1 pound of smoked sausage
1 pound of red potatoes
1 diced bell pepper
1 medium chopped onion
3 cloves of minced garlic
2 tablespoons of olive oil
1 teaspoon of dried thyme
Salt to taste
Pepper to taste
Start by washing and chopping your potatoes, bell pepper, and onion into bite-sized pieces. Mince the garlic, and slice the smoked sausage.
In a large skillet, heat the olive oil over medium heat. Add in the smoked sausage slices and sauté until browned, approximately 5-7 minutes.
Add the chopped onion, bell pepper, and garlic. Stir and cook for an additional 3-4 minutes until the onions are translucent.
Add the chopped potatoes along with thyme, salt, and pepper. Stir to combine and cover the skillet. Cook for about 15 minutes, stirring occasionally.
