Ingredients
Scale
2 cups all-purpose flour
1 ½ cups granulated sugar
1 cup unsalted butter, softened
1 cup buttermilk
4 large eggs
1 tbsp baking powder
1 tsp vanilla extract
1 tsp pumpkin spice
1 pre-made pumpkin pie
1 pre-made pecan pie
1 cup cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
2 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in buttermilk, baking powder, vanilla extract, and pumpkin spice until fully combined.
Divide the cake batter evenly between two greased 9-inch round cake pans. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
Place one layer of cake on a serving platter, then carefully place the pumpkin pie on top of it. Add a second layer of cake, followed by the pecan pie.
In a mixing bowl, beat the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until well incorporated. Generously frost the exterior of the assembled Piecaken.
For a festive touch, consider garnishing with chopped pecans, chocolate shavings, or a sprinkle of cinnamon. Slice into this delightful dessert and serve to your guests.
