1 pound of dry black-eyed peas
4 tablespoons of butter
1 large onion, diced
4 cloves of garlic, minced
4 cups of vegetable broth
1 can (13.5 oz) of coconut milk
1 teaspoon of thyme
1 teaspoon of cayenne pepper
Salt and pepper to taste
Instructions
Start by rinsing the dry black-eyed peas thoroughly under cold water. If using canned peas, skip this step. Soak the dry peas overnight or do a quick soak in boiling water for an hour.
In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5-7 minutes. Add the minced garlic and sauté for another minute until fragrant.
Add the soaked black-eyed peas (or canned) into the pot with the onion and garlic. Stir well to combine.
Pour in the vegetable broth. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 45 minutes or until the black-eyed peas are tender, stirring occasionally.
Once the peas are tender, stir in the coconut milk and mix well. Add the thyme, cayenne pepper, salt, and pepper to taste. Let it simmer uncovered for another 10-15 minutes to thicken.
Serve warm, optionally garnished with fresh herbs.
