2 bell peppers (1 red, 1 yellow)
2 medium carrots
2 cups broccoli florets
1 large red onion
3 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
1 teaspoon dried oregano
4 ounces feta cheese
1 tablespoon lemon juice
Preheat your oven to 425°F (220°C).
Wash and chop the bell peppers, carrots, broccoli, and red onion into bite-sized pieces.
