4 medium carrots, peeled and sliced
2 bell peppers, diced (preferably assorted colors)
2 zucchini, sliced
1 large red onion, cut into wedges
4 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
½ cup feta cheese, crumbled
Instructions
Preheat your oven to 425°F (220°C).
Wash and cut all your vegetables into even-sized pieces. Reserve half of the feta for topping later.
In a large mixing bowl, toss the chopped vegetables with olive oil, minced garlic, oregano, salt, and pepper until coated.
Spread the seasoned vegetables onto a parchment-lined baking sheet in a single layer.
Roast the vegetables in the oven for 25-30 minutes, stirring halfway through.
Remove the vegetables from the oven and sprinkle the reserved feta cheese on top.
