4 tilapia fillets (about 6 oz each)
2 red bell peppers, roasted and peeled
1 medium onion, diced
2 cloves garlic, minced
1 cup vegetable broth (or chicken broth for a richer flavor)
1 tsp dried oregano
Olive oil for frying
Salt and pepper to taste
Fresh basil leaves (for garnish)
Instructions
Begin by roasting the red bell peppers. You can do this directly over a gas flame or under a broiler until the skin chars and blisters. Place them in a bowl and cover with plastic wrap for 10 minutes to steam. Once cooled, peel the skins off and remove the seeds.
In a blender or food processor, combine the peeled roasted peppers, garlic, and vegetable broth. Blend until smooth. Add the dried oregano, and season with salt and pepper. Pulse again to combine.
In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and sauté until they’re translucent and fragrant, about 5 minutes.
Add the tilapia fillets to the skillet with the onions. Season the fillets with salt and pepper, and cook them for about 3-4 minutes on each side until they are golden brown and cooked through.
Once the fish is cooked, pour the roasted pepper sauce over the tilapia. Allow it to simmer for an additional 3-5 minutes, letting the flavors meld together beautifully.
Transfer the tilapia to a serving platter and garnish with fresh basil leaves. Serve hot, and enjoy the aromatic flavors!
