  • 2 red bell peppers, roasted and peeled
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth (or chicken broth for a richer flavor)
  • 1 tsp dried oregano
  • Olive oil for frying
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)

  • Instructions

  • Begin by roasting the red bell peppers. You can do this directly over a gas flame or under a broiler until the skin chars and blisters. Place them in a bowl and cover with plastic wrap for 10 minutes to steam. Once cooled, peel the skins off and remove the seeds.
  • In a blender or food processor, combine the peeled roasted peppers, garlic, and vegetable broth. Blend until smooth. Add the dried oregano, and season with salt and pepper. Pulse again to combine.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and sauté until they’re translucent and fragrant, about 5 minutes.
  • Add the tilapia fillets to the skillet with the onions. Season the fillets with salt and pepper, and cook them for about 3-4 minutes on each side until they are golden brown and cooked through.
  • Once the fish is cooked, pour the roasted pepper sauce over the tilapia. Allow it to simmer for an additional 3-5 minutes, letting the flavors meld together beautifully.
  • Transfer the tilapia to a serving platter and garnish with fresh basil leaves. Serve hot, and enjoy the aromatic flavors!
