12 oz. of your favorite pasta (spaghetti, fettuccine, or whole wheat)
1 cup fresh ricotta cheese – creamy and slightly sweet
2 cups cherry tomatoes – bursting with flavor
3 cloves garlic, minced – for aromatic depth
2 tbsp olive oil – adds richness
1/2 cup fresh basil, chopped – for a fragrant finish
Salt and pepper to taste
Parmesan cheese for serving (optional)
Instructions
In a large pot of boiling salted water, cook your pasta according to package instructions. Aim for al dente.
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the cherry tomatoes and cook until they begin to burst, about 5-7 minutes.
Once the pasta is cooked and drained, reserve a cup of the pasta water and then add the pasta to the skillet with the tomatoes. Stir gently to combine.
Remove the skillet from heat and gently fold in the ricotta cheese and fresh basil. Season with salt and pepper to taste.
