1 medium onion, chopped
2 cloves garlic, minced
1 can (28 oz) whole peeled tomatoes, with juice
2 cups vegetable broth (or chicken broth for a non-veg option)
Salt and pepper, to taste
1 teaspoon dried basil
1 teaspoon sugar
1 cup heavy cream
1 cup grated cheese (cheddar or mozzarella work well)
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup milk
1/4 cup grated cheese (for dumplings)
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and sauté for another minute until fragrant.
Pour in the can of whole peeled tomatoes, along with the juice, and use a spoon to break them up. Add the vegetable broth, salt, pepper, dried basil, and sugar. Bring to a simmer and let it cook for about 15 minutes, allowing the flavors to meld.
Using an immersion blender, blend the soup until smooth. If you don’t have one, carefully transfer the soup to a regular blender and blend until creamy, then return it to the pot.
In a separate bowl, combine the flour, baking powder, and salt. Stir in the milk and grated cheese until a thick batter forms.
Bring your blended tomato soup back to a gentle simmer. Drop spoonfuls of the dumpling mixture into the soup. Cover the pot and cook for an additional 10–12 minutes, or until the dumplings rise and are cooked through.
