2 chicken breasts (about 1 lb)
5 cups of fresh spinach
1 can (14.5 oz) of canned diced tomatoes
2 tablespoons of olive oil
3 cloves of garlic, minced
1 teaspoon of Italian seasoning
Salt and pepper to taste
½ cup of grated Parmesan cheese
Instructions
Step 1: Cook the Pasta – Bring a large pot of salted water to a boil and add the whole wheat pasta. Cook according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water for later use.
Step 2: Prepare the Chicken – While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from the skillet and let them rest before slicing.
