1 ½ cups of graham cracker crumbs
½ cup (1 stick) of unsalted butter
1 cup of granulated sugar
16 oz of cream cheese, softened
½ cup of sour cream
1 teaspoon of vanilla extract
3 large eggs
1 cup of caramel sauce
½ cup of chocolate sauce
1 cup of toasted, chopped pecans
Instructions
Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter, pressing the mixture into the bottom of a springform pan. Bake for 10 minutes, then allow it to cool.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the sugar, mixing until fully incorporated. Then blend in the sour cream and vanilla extract, followed by the eggs one at a time.
Add ½ cup of caramel sauce and chopped pecans to the cheesecake mixture. Gently fold these ingredients into the batter.
Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for approximately 55 minutes, or until the center is just set and slightly jiggly.
Once baked, turn off the oven and crack the door slightly, allowing the cheesecake to cool in the oven for about 1 hour. After that, let it cool to room temperature before refrigerating for at least 3 hours, or overnight.
