1 cup sour cream
3 cups apples, peeled and thinly sliced (Granny Smith or Honeycrisp work best)
½ cup sugar
1 teaspoon ground cinnamon
1 tablespoon lemon juice
1 cup oats
½ cup flour
½ cup brown sugar
½ cup unsalted butter, melted
1 teaspoon ground cinnamon
Instructions
In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the softened cream cheese with sugar until smooth. Add vanilla extract, then incorporate the eggs one at a time, mixing thoroughly after each addition. Finally, blend in the sour cream until creamy and well-combined.
In another bowl, toss the sliced apples with sugar, cinnamon, and lemon juice until evenly coated.
