  • 1 cup of ricotta cheese

  • ½ cup of Parmesan cheese, grated
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 2 tablespoons of olive oil
  • ½ cup of sundried tomatoes
  • 2 cloves of garlic, minced

  • Instructions

  • Combine flour and salt in a large bowl, make a well in the center and whisk in the eggs until a shaggy dough forms. Knead for about 10 minutes until smooth. Cover and let rest for 25 minutes.
  • In a mixing bowl, combine ricotta cheese, basil, Parmesan cheese, garlic, pepper, and salt to taste. Mix to create a creamy filling.
  • Divide the dough into four pieces. Roll each piece out until thin, about 1/16 inch thick.
  • Cut the rolled-out dough into rectangles. Place a teaspoon of filling along one side and fold over; pressing to seal and remove any air pockets.
  • Boil salted water; cook ravioli until they float, about 3-4 minutes. Drain carefully.
  • In a skillet, heat olive oil and sauté sundried tomatoes for 2-3 minutes. Toss ravioli gently to coat before serving.
