2 cups of all-purpose flour
2 large eggs
1 cup of ricotta cheese
¼ cup of fresh basil, chopped
½ cup of Parmesan cheese, grated
1 teaspoon of salt
½ teaspoon of pepper
2 tablespoons of olive oil
½ cup of sundried tomatoes
2 cloves of garlic, minced
Instructions
Combine flour and salt in a large bowl, make a well in the center and whisk in the eggs until a shaggy dough forms. Knead for about 10 minutes until smooth. Cover and let rest for 25 minutes.
In a mixing bowl, combine ricotta cheese, basil, Parmesan cheese, garlic, pepper, and salt to taste. Mix to create a creamy filling.
Divide the dough into four pieces. Roll each piece out until thin, about 1/16 inch thick.
Cut the rolled-out dough into rectangles. Place a teaspoon of filling along one side and fold over; pressing to seal and remove any air pockets.
Boil salted water; cook ravioli until they float, about 3-4 minutes. Drain carefully.
In a skillet, heat olive oil and sauté sundried tomatoes for 2-3 minutes. Toss ravioli gently to coat before serving.
