Instructions
Start by measuring out your aquafaba, powdered sugar, and vanilla extract. Having everything on hand will make the process smoother.
Using an electric mixer or a whisk, beat the aquafaba on medium speed until stiff peaks form. This should take about 2 to 5 minutes.
Once your aquafaba has the right texture, gently fold in the vanilla extract. Take care to maintain the aeration you just created.
Next, add the powdered sugar one cup at a time. Beat on low until combined, then increase speed to medium until the icing is smooth. This should take around 3-5 minutes.
If your icing seems too runny, add more powdered sugar until you reach your desired thickness. For a thinner consistency, add a little extra aquafaba.
If desired, separate the icing into bowls and add natural food coloring one drop at a time. Stir well until the color is even and vibrant.
Your vegan royal icing is now ready to use! Keep in mind that it is best used the same day, but you can store it in an airtight container for up to 1 week.
