1 (9-inch) pastry crust of shortcrust pastry
8 oz (about 225 g) of chopped white chocolate
1 cup (240 ml) of heavy cream
1 cup (100 g) of fresh cranberries
1/2 cup (60 g) of powdered sugar
1 teaspoon of vanilla extract
1/4 teaspoon of salt
1/4 cup (57 g) of unsalted butter
Instructions
Preheat your oven to 350°F (175°C). Roll out your shortcrust pastry and fit it into a 9-inch tart pan. Trim the edges neatly. Poke holes in the base with a fork to prevent the pastry from puffing up during baking. Chill in the fridge for about 15 minutes.
Line the pastry with parchment paper and fill it with pie weights or dried beans. Bake for 20 minutes until the edges are golden. Remove the weights and parchment paper, then bake for another 10 minutes until the base is firm. Let it cool completely.
In a saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chopped white chocolate, stirring until melted and smooth. Incorporate vanilla extract and a pinch of salt. Set aside to cool slightly.
Once the ganache has cooled, fold in the fresh cranberries until evenly coated.
Pour the cranberry ganache mixture into the cooled tart shell. Smooth the top with a spatula. Place the tart in the refrigerator for at least 1 hour to allow the ganache to set completely.
Once set, slice the tart and serve with whipped cream or fresh mint leaves.
