3 cups of all-purpose flour
1 ½ cups of granulated sugar
2 teaspoons of baking powder
½ teaspoon of salt
¾ cup of unsalted butter, softened
3 large eggs
1 cup of buttermilk
2 tablespoons of citrus zest (orange, lemon, lime)
1 cup of champagne or sparkling wine
Assorted fresh citrus slices (for decoration)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the softened butter until creamy, then gradually add the granulated sugar and continue beating until light and fluffy.
Incorporate the eggs one at a time, mixing well after each addition. Gradually add the buttermilk, and mix in the citrus zest.
Gradually add the dry ingredients to the wet mixture, alternating with the champagne, beginning and ending with the dry mixture.
Pour the batter into the prepared pans and bake for 35-45 minutes, until a toothpick inserted in the center comes out clean.
Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
Once cooled, frost with a festive citrus buttercream and decorate with fresh citrus slices.
